Whole30-Day 13

I started today by reading a scripture that really encouraged me.

You didn’t choose me, I chose you. I appointed you to go and produce lasting fruit, so that the Father will give you whatever you ask for, using my name. John 15:16

I was reading a blog post this morning where she used this verse and said, “I am chosen, and because I am chosen I have a responsibility to bear lasting fruit. I don’t think that I can remain a worrier and doubter and believe in John 15:16. I am a bird, and whatever the Lord asks of me, he will provide.” You can read the entire blog post on Marilynn Chadwick’s website today. It was a good reminder to stop worrying about things and trust that God has chosen me and will provide what He knows I need today.

I had the usual breakfast of 2 scrambled eggs, 1 slice sugar-free bacon and half a banana. For a morning snack, I ate the other half of the banana with a spoonful of almond butter. I’m not drinking coffee today, so I’m trying to get some extra carbs to give me energy. It is a cold, rainy day today and it makes me want to snuggle back into bed and finish watching season 2 of Downton Abbey! But I need to take advantage of the kids being in school and get some work done, so here I go…

Lunch was a warmed up bowl of slow cooker chicken vegetable soup leftover from last night with a handful of raisins as ‘dessert’. I wanted something munchy for a late afternoon snack, so I tried once again to make sweet potato chips and carrot chips. The carrots would have made a great snack for a doll’s tea party as they ended up shrinking to the size of my small fingernail. They were tasty though! The first tray of sweet potato chips burned but the next tray did a little better. I was finally able to get them crispy!! The trick is to put them on a cooling rack instead of leaving them on the hot tray.

Dinner tonight is from PaleOMG for herb spinach chicken burgers. I didn’t have any ground chicken, so I used turkey instead. I carmelized some onions to go on top and ate it with an avocado bun! Yum!!

  1. Great Scripture verse and a great reminder to stop worrying and trust God. He chose us, he has a plan for us. Let’s let Him do His thing.

    The burgers were delicious. I am glad you figured out the benefit of using the cooling rack. Who knew? Keep it up! You are doing a great job with your eating.
